Making Probably Too Much Food

May 27, 2024

Had another bout of energy and decided to make some of the food from my list of foods that I'd like to make.

To start, I made some Tabbouleh. I love tabbouleh and will always get it whenever I can, so this time I resolved to making it myself. Besides I had a 5 lb bag of bulghur wheat lying around in my pantry so why not use it? (Why such a large bag? I myself still don't know why I bought so much at the time.)

Next, I made Kibbeh, a stuffed croquette like dish made of bulghur wheat, ground meat, onions, spices, and often pine nuts. After making the shell dough and filling, I let it rest in the fridge and continued making the other things I had planned and somehow I found myself shaping and filling the balls at 11pm. Not entirely ideal but nothing that putting on a long show in the background can fix.

While letting the kibbeh dough rest in the fridge before I could shape them, I made Shish Barak, spiced meat dumplings cooked in a creamy yogurt garlic sauce. Didn't get any pictures of the finished shish barak or kibbeh, but I did make enough to last me for… quite a while. Ha.
